Baked Stuffed Carrots

Stuffed carrots? What a great idea! This recipe, originally from Just Vegetable Recipes, is easy and fun. Be creative with the filling, try substituting you favorite mix in to the mashed carrots.

From the farm: carrots, onion, butter

Ingredients

  • 4 lg carrots washed and pared
  • 1 med onion chopped
  • 1/2 red or green bell pepper chopped
  • to taste salt & pepper
  • 3 T butter

Instructions

Boil carrots for 30 minutes or until mildly cooked. Cut in halves. Scoop out centers and mash. Chop onion and pepper and add salt, pepper, and butter. Add to mashed carrot centers and stuff the eight remaining halves of carrots. Bake in a dish greased with 1 T butter for about 30 minutes at 350°F.

Serves: 8


Variation  Here is a variation to try that Cat is a big fan of. Chop and sauté the onion with 2 cloves of garlic in olive oil. When the onions are golden, add in 1 T of fresh sage finely chopped, stir.

Add in 1/2 cup of chopped, toasted pecans. (You can toast them yourself beforehand in a fry pan on medium heat. Stir for about 3 min or until you can smell them.) Mix it all together with the mashed carrots and use for stuffing.
